The Five Mile Brook™ vineyard has tuart loam soils which overlie a limestone substrate. Warm ripening conditions, enhanced by cooling Indian Ocean afternoon sea breezes, result in an outstanding terroir.
The grapes have been harvested and night and then fermented under strict temperature control for six months with micro-oxygeneration in tanks, followed by maturation for six months in 1 and 2 year old American oak barrels.
